A sparkling red, ruby colour was followed by French toast with caramelised strawberry sauce and dark chocolate covered raisins. Weird on the palate neat, not sure how to describe it, but we ended up with sweet succulent figs combined with salty blue cheese and Parma ham. With water the aroma was a funky mixture of camphor, macerated berries and motor oil. To taste now, Curacao bitter orange peel, whilst in the finish; venison with Urfa biber blackberry coulis – this is clearly for the more adventurous souls out there. After 13 years in an ex-bourbon barrel we transferred this rum into a 1st fill red wine barrique.
