Aromas at full strength start with juniper to the fore along with fresh and zesty dried lemon peel and wet cut grass. It’s spicy with coriander seed, anise and tree sap. Tantalisingly sweet too – lemon meringue pie with melon and peach and gentle herbs in the background. Take a sip and it is lively and drying (lemon peel and coriander seed), sweet with a pleasing bitterness and a lemon meringue pie lingering finish. Tonic water brings out a refreshing mix of citrus, bitterness and sweetness. It’s aromatic with juniper, aniseed and coriander seed with gentle pepper warmth and sweet and juicy like a subtle fruit salad.
