Soft, fresh and fragrant, right at the start, like a vintage lady’s powder compact or delicate perfumed body powder, before somewhat different aromas of wholegrain mustard and cooking blackberry jam arrived. On the palate neat, intense with flavours of fruit chutney, candied chestnuts and a boozy blueberry lemon trifle. Adding a drop of water and it turned into a gâteau de mille-feuilles or a pistachio baklava with orange-cardamom syrup. The taste diluted was that of an apple brandy strudel, cinnamon spiced apples, raisins, honey and a liberal dash of brandy. Thirteen years in an ex-bourbon hogshead, finished in a virgin oak hogshead with a heavy toast and a medium char.
