The panel found a curious mix of vanilla ice cream drizzled with grassy olive oil, soya bean paste, cornflakes, icing sugar and lemon juice. It continued with putty, clay, tarragon, rosewater, white pepper and window cleaner. When reduced we noted a more traditional profile that included dried cranberry, banana chips, porridge oats, salted butter and sandalwood. The mouth was initially full of wildflowers, digestive biscuits, earth, crushed dandelions, oatcakes, chicken broth, lemon thyme, grilled sweetcorn, salty olive bread and soor plum sweeties. Water gave a subtle, spiced falafel note with sweet pastry, chopped coriander, fruity chilli, chives, marzipan and lemon jam.
