Cask No. 68.37

A rummage in the dunnage

Highland, Southern

A familiar whiff of charcoaled oak filled the air like the first step into a dunnage warehouse with heavy casks merging vanilla and coconut with fine maturing spirit. Spicy aromas fused with nutty nuances before we discovered banoffee pie and honeycomb. The palate was sweet like toffee and cocoa but with tart overtones of underripe plums and cranberries. A dash of water simply accentuated the wood, bringing forth charred oak staves that had been sitting in a dimly lit corner of the warehouse. Coconut husk now barrelled forward and joined soft fudge on banana skins while on the finish came sour cherries, fruit cocktail and lots and lots of old oak casks.
