Rich and buttery to begin. All on shortbread, popcorn and lanolin with malted milk, gooseberry fool, sweetbreads and aged muscat. A little beeswaxed wood and then a shift towards coconut milk and Thai basil. Reductions lifts up the earthier qualities: clay, limestone and wax all come forth with dried herbs, rapeseed oil and some sweet, sherbet and grassy notes. The palate initially displays poppy seeds, olive oil, herbal toothpaste then effervescent citrus peels. The earthiness continues with mushroom powder, hay and sunflower seeds. While in the background there is honey and dried cranberries. Water enhances the herbal notes with hints of root beer, muesli, lemon jelly and an old hay loft farmyness.
