Salty sea air took us directly to a maritime scene packed with dried seaweed, shellfish and tuna sandwiches. An injured fish wrapped in bandages combined medicinal hues with coastal cues and evolved into pickled herring, gravlax and salty oysters. A puff of distant burning heather presented heavy perfumed smoke that thickened to the reek of a fishing trawler's engine room. This sweet yet dirty smoke continued through to the palate with a thick grease and treacly nature. Lighter notes of pears poached in vanilla syrup delivered a juicy expression that uncovered salted oranges and smoked rhubarb. The finish expressed the epitome of peated barley and was complemented perfectly by a fistful of salted peanuts.
