Cask No. 52.30

Nae man can tether time nor tide

Highland, Northern

In Tam O’Shanter, Robert Burns captured the ephemeral nature of beauty with: “But pleasures are like poppies spread, You seize the flow’r, its bloom is shed.” This dram invites you to hang on to life’s fleeting pleasures for as long as possible, with a rich nose afloat with woody character, coconut and pencil shavings joining nutmeg, cinnamon and waxy textures. The sweetness of brown sugar, figs and plums then support a salty hue that suggest seaside rock pools and a turning tide. The palate offers toffee and caramel before heading in a more spicy direction of fresh ginger, then quickly moving back towards porridge and marzipan. Water accentuates the fruity elements that combine apples and pears with orange marmalade and sea buckthorn. Dried seaweed and tobacco notes then frame soft leather and a hint of burnt twigs before swinging towards liquorice sticks, green tea and herbal tones of rosemary and sage.
