Lady of the night

We noted fruity aromas of peaches, pears, and mangos at first. With time a perfumed floral scent took over which reminded some of a ‘lady of the night’. Hot and almost over-the-top sweet perfumed flavours attacked the taste buds neat and only a dash of water released the pressure. Now a lot more balanced, spicy tart with pepper sauce and star fruit, polished conkers using beeswax and in the taste, puff pastry with cinnamon sugar and Bourbon glaze. After 11 years in an ex-bourbon hogshead, we transferred this whisky directly into a Sauternes cask for the remainder of its maturation.
