A big waft of vanilla emerges from the glass. Then salted herby flatbreads, tangy salad dressing, toasted seeds, sourdough starter, Turkish delight, paprika, lemon zest and wild blossoms. Somewhere nearby a bottle of sour Geuze beer is poured. Water brings a squeeze of fresh lemon juice, fabrics, air freshener, photocopier toner, peanut butter on toast and waxed canvas. To taste there's a lovely mix of sour cherries, wild garlic, pine extract, chalk, ink, lemon curd, jasmine tea, rosewater, young estery rum and white chocolate. With reduction it develops a drier side with hints of light antiseptic, pumpkin seed oil, toasted cashews, sun lotion and plum chutney. A scatter of fruity trail mix in the finish.
