A nose that jangles with crushed ivy, sharp citrus, cut grass, fresh fruit tarts, ripe gooseberry and glazed pastries. Lovely notes of floral honey, new world IPA, mint tea, juniper, hawthorn, herbal infusions, cough drops, sunflower oil, white asparagus and chopped tarragon. Water brings lambic breads, sour ales, cider apple, greengage, freshly baled hay, white pepper, hessian sacks, sandalwood and petrichor. The mouth opens with creamy lime posset, lemon jelly, fruit sweets, bubblegum, lemongrass, heather honey, old-school shilling ales, snapped twigs, an old potting shed and mandarin liqueur. Some dried-out pinecones and potpourri as well. With dilution the palate opens up to reveal dried marjoram, bay leaf, parsley and toasted fennel seed. Very herbal and genteel. Some nettle tea, spiced orange marmalade, brandy snaps, graphite, clay and lemon thyme.
