The neat nose bursts with raisins, plump sultanas and prunes, maple syrup, cinder toffee apricot flan, Jaffa cakes and some fine wines (orange Muscat, Malmsey). The palate finds Marsala and oloroso dulce, spotted dick, Eccles cakes, cinnamon toast and toffee and demerara. The reduced nose magically combines fruit cake, raisin fudge and dried figs with orange and coffee-flavoured matchmakers and crunchy nut cornflakes while the palate now delights with rumtopf, soft caramel and demerara on roasted peach, with ginger snaps and peppery black bun to finish. After 16 years in an oloroso butt we transferred this into new oak.
