Saigon cinnamon spiced shortbread

A fresh, fruity aroma at first with plenty of apples, pears and ripe strawberries was soon followed by the more exotic scent of coconut, vanilla and sweet Tahitian Tiaré flowers. We found a sweet, dry heat on the palate neat like a spiced Simnel cake (light fruit cake made with fragrant spices, dried fruits, zest and candied peel with a marzipan filling). After adding water, a summer berry Pavlova with fresh strawberries and raspberries emerged whilst on the palate; the spicy dryness of shortbread made with ground ginger, nutmeg and cardamom as well as a little Saigon cinnamon and black pepper.
