The colour was an Orcadian sunset and the aroma found us inside a typical Highland ‘Blackhouse’ with the central peat-fired hearth and the soot having turned the rafters of the low thatched roof black. Sweet smoke on the palate neat, like a ham and haddie pie - bacon and smoked haddock. Water added the salty sea scent of Tatties ‘n’ Herrin (salt herrings and potatoes) and by then we were all sitting around the fire attentively listening to stories from the Orkneyinga Saga. After 24 years in an ex-bourbon refill hogshead, we transferred this whisky directly into a 1st fill American oak Pedro Ximenez hogshead for the remainder of its maturation.
