A moist fig cake with a caramel glaze, buttered rum candied pecans and sweet poppy seed buns on the nose neat, whilst the palate had plenty of dry, big and bold Amontillado sherry, nutty with some burnt caramel, quince and a pungent, slightly mineralic, finish. Water initially added a whiff of sherry vinegar, soon followed by warm and comforting black cherry loose pipe tobacco in a leather pouch. The flavours reminded us of brown spices and citrus peel with a long finish of fresh roasted nuts. After 13 years in an ex-bourbon hogshead we transferred this whisky into a first-fill oloroso hogshead.
