Imagine you are in a tabanco (sherry bar) in Jerez at midnight - the flamenco rhythm of a buleria, the palmas (clapping), pitos (finger snapping) and golpeo (knocking knuckles on a table) are embellishing the guitar playing, singing and dancing. In a short break you order an Amontillado sherry served straight out of the barrel and noted down with chalk on the bar with the rest of your bill. When we added water, we ordered a Blood and Sand cocktail; whisky, blood orange juice, sweet vermouth and cherry liqueur - named after Rudolph Valentino’s 1922 bullfighter movie. You cannot explain it, you have to experience it!
