Refined smoke arrived in in small puffs from a fishing boat as aromas of bandages and antiseptic merged with salt water on charred wood. The palate initially carried a punchy weight abundant with chillies and hot charcoals but cooled with menthol and peppermint as sweetness emerged. With water a more settled appeal was found as the smoke from beach bonfires bonded to salted liquorice and pine nuts darkened over a flame. Smoked kippers were served with teriyaki sauce whilst the palate became creamy like burnt milk with oysters. The smoke had softened and found a balance with sweetness as digestive biscuits and cloves combined on the complex finish.
