A picnic in the sand dunes on a warm sunny day with brown butter bourbon spiced biscuits, popcorn with honey and cinnamon as well as lemon poppy seed snack balls made with oats – simply delicious. On the palate, a lusciously sweet and a spicy heat; malted custard French toast with a warm spicy gingery compote and lemon peel. A drop of water and the sea breeze made a lovely rustling sound gently swishing the marram grass on the dunes and the scent of vanilla custard, white chocolate, lavender and rosewater emerged. The taste fresh and clean with delicate citric notes and a minty aftertaste reminded us of a classic mint mojito cocktail.
