Wonderful aromas bounced between the honeyed complexity of dessert wine and a generous glass of viognier, abundant in peach, apricot and orange flavours. Then heavier notes of dried figs and almond cake made their way towards festive trifle and fresh watermelon. A particularly light mouthfeel danced over cashew nut oil and toasted oak before gently settling on pineapple sorbet and salted caramel chocolate. With water came lovely candle wax textures that coated Madeira cake, burnt toffee and dried prunes as maple syrup oozed over apples and orange peel. The complexity captivated our thoughts entirely as we now passed through tropical fruits with a sprinkle of salt and a liquorice stick to finish.
