We sat down for a ploughman’s lunch with a variety of cheeses, including extra matured Gouda, apple chutney, liver pate, olives, pickled cucumber and celery as well as plenty of grilled bread. The palate neat - punchy, wacky and ashy with an enormous intensity of sweetness as well as peppery spiciness rounding off with smoked Bavarian cheese and burnt oranges with rosemary. Takes water well as we prepared a toast Hawaii (broiled open sandwich with a slice of ham, pineapple and melted cheese on top). The taste was now fuller, yet still cranky with flavours of salt-crusted cod with lime and garlic as well as salted chocolate-covered caramels.
