The nose evokes a Highland croft; smoke-infused rafters, crumbling plaster walls and woollen socks drying on the Aga; someone wearing a plastic mackintosh arrives to a breakfast of malty porridge and banana bread on the wooden table. The palate provides a satisfying mix of jam on over-done toast, straw, liquorice Allsorts, fried chilli, crab shell, demerara and toasted hazelnuts; the peat smoke tingles without overpowering. The reduced nose has burnt hay and Cornish wafers; tar, whittled wood and sea-invaded beach bonfires. The palate now offers clover honey sweetness, tingling citric sherbet and sugar-coated fennel seeds and ginger heat.
