Pineapple sweets and papaya instigated a playful approach that joyfully skipped along beside melon, plums and dried apricots. Sweet woody tones of balsa wood constructed a framework to support marzipan and ginger marmalade as dried mango introduced fermented fruits that led us towards calvados and cognac. The zestfulness of kiwi and cassis combined on the palate with hedgerow berries and pear skin as velvety textures revolved around us like peaches in velour jumpsuits. Fragrant wood returned with pencil shavings in a school desk to be joined by raspberry icing and the fine grains of grape seeds to finish.
