Panna cotta, kilts and candlelight

Highland, Southern

The evocative smell of wax candles fused with creamy panna cotta textures and the crunchy character of tree bark on a forest floor. A fresh and fruity zip delivered physalis and quince jelly beside a glass of williams pear schnapps. The palate introduced fresh horseradish sauce with a peppery tingle that faded into green apples, baked orange and nutmeg. Water enhanced the waxy and perfumed elements, pushing them towards creamy coconut and peaches. A dry undercurrent persisted with old wicker baskets and the seasoned wool of an antique kilt. Ginger marmalade made with demerara sugar then shone through before it swerved towards dried prunes and candyfloss on the finish.
