A nose that smoulders with curiosity! We found smoked lime juice, an overstocked medicine cabinet, deserted hospital corridors, coal scuttles, wood ash and lemon pie next to a beach bonfire. Water brought forth coconut macaroons and an earthy, slightly dirty note of wood bark. In the corner a soldering iron remains dangerously hot and there’s a suggestion of scrunched tinfoil. The mouth revealed a dram of immense character: farmyard, industrial qualities, peat fires, coastal zing, medicine, wax, brake fluid and a slug of aged Geuze beer. Water gave voice to the sherry to an extent with some wet leaves and molasses alongside maraschino cherry and tar liqueur. Matured for 4 years in an ex-bourbon barrel before being re-racked into a sherry barrel for the remainder of its maturation.
