Treacle trickled over pecans and smoky peanut brittle with a sprinkling of cinnamon and salt. Light oil and burnt hazelnuts introduced maritime character as lobster nets combined with fish boxes on the shore. Complex notes of herbs d'Provence and lime pickle merged into aniseed as we approached the big and chewy palate. Bellowing bonfire smoke encased mussels and pink pickled ginger in a glorious combination of peat, smoke, spice and maritime. The full and rounded body coated the mouth with an oily sheen that hinted towards dripping candles and finished sweet with applewood smoke.
