It’s all on honeyed porridge at first. Followed by flapjacks, white jelly babies, silage, dry straw, hay loft, salted caramel, hot grist, limoncello and muesli. There’s also marjoram, mint and apple strudel. Reduction brings out mustard oil, mint julep, hand cream, yellow chartreuse, gauze, lemon syllabub, egg white in a cocktail and 80 shilling ale. The palate is prickly with chilli heat, salted butter, some distant flint smoke, linseed oil, soft waxes, liquorice, foam shrimps, chopped parsley, honeysuckle and dried tarragon. With water we find buttered toast, rice in vine leaves, hot chocolate, wine gums, fruit drops and menthol cough medicine. Matured for 6 years in a bourbon hogshead before transfer to a heavy toast, medium char hogshead.
