The palate gives away to light grassy notes accompanied by distinct baking spices. Saigon cinnamon and wheated bourbon come to mind. Overall, this dynamic grain offering drinks like a rich, complex bourbon. It’s not at all “overly oaked” despite its thirty-one glorious years spent in the barrel. Perfect for après ski or for instantaneous transport to a breezy Caribbean balcony.

At nearly 60% ABV, this whisky appreciates well with water, which makes this bottle a particularly good investment in the world of cask strength. It stands up nicely to rich, creamy cheeses, pairing especially well with smeared goat cheese atop a warm, toasted baguette with just a drizzle of olive oil… trust me on that one.
