Playful on the nose, the unmistakable smell of a chewy fig cookie! It evolves quickly to whiffs of raisins and overly ripened cherry skins. Upon first sip, this whisky is distinctively viscous. Delicious like honey, the whisky is rich with caramel, toffee, and Pedro Ximénez sherry. A symphonic finish of leather, Bing cherries, and agave has me easily going back for more.
A silky, decadent mouthfeel like this is usually only reserved for our fantasies. The well-designed richness found in this whisky comes around but only once in a blue moon. Sherry meets mezcal for a sweet yet tannic, oaky finish. Have you ever drizzled a little honey on your pancakes? This cask would be a perfect at Sunday brunch. Ricotta cheese would lusciously melt in the company of this whisky; ricotta lemon pancakes, even better.
